In unison with the Pairons
At the Auberge Communale in Le Mont-sur-Lausanne, Fabien Pairon and his wife Jennifer cultivate the art of simple dining – by Jessica Bertoncini
Crowned Meilleur Ouvrier de France (MOF) charcutier-traiteur in 2011, Chef Fabien Pairon now practises his art in the heart of the Vaud canton, after more than nine years spent not far from there, at theÉcole Hôtelière de Lausanne. Keen to offer local cuisine, the Chef reinvents his menu every six weeks according to seasonal produce. Featuring the MOF’s charcuterie creations, the menu also includes vegan dishes, as well as fish such as Grisons salmon and organic Isle trout, offering a tantalizing choice for all to enjoy.

Pâté croûte
For starters, there’s nothing like the indestructible and succulent pâté croûte with four mendicant fruits, which transports us into the exquisite world of charcuterie, as well as the smooth and creamy Malakoff d’or from Timothée Pittet, the Chef’s second-in-command, named best in the world in 2022. The tone is set: sharing and indulgence take center stage. For the main courses, the melt-in-the-mouth veal breast with mushrooms and its millefeuille of potato, carrot, celery and sweet potato seduces at first bite, as do the oven-blown quenelles of Lake Geneva pike with crayfish cream, accompanied by saffron rice, whose taste takes us back to the banks of the Rhône.
The tasting continues on a savory note with a cheese duo: Gruyère AOP and Vacherin Fribourgeois from the Ursy cheese dairy, quince and almonds, in perfect harmony with Domaine Daniel-Étienne Defaux’s Chablis Grand Cru Les Grenouilles. Last but not least, a vanilla panna cotta with kiwis from La Côte, a perfect combination of acidity and sweetness.

It’s in a warm and friendly atmosphere, in the image of Madame Pairon, host of the premises, that this beautiful moment of cuisine comes to an end. An unmistakable illustration of the tandem’s fine values, the Auberge du Mont embodies generosity and celebrates life’s pleasures around a fine table, in the almost unchanging setting of an old inn, serving as a showcase for the expression of a soothing, unpretentious ambience. A final visit to the restaurant’s boutique allows you to leave with a delicacy of your choice, enough to tide you over until next time.
