Overlooking Rabat, Sal\u00e9, and the Atlantic Ocean, the new restaurant by<a href=\"https:\/\/www.ducasse-paris.com\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><strong>Alain Ducasse<\/strong><\/a> is inspired by the Riviera, while drawing on local Moroccan ingredients. <\/p>\n<h2 style=\"font-weight: 400;\">250 varieties of citrus fruits<\/h2>\n<p style=\"font-weight: 400;\">At the helm of the kitchen, Morgan Perrigaud works in particular with L\u2019Agrumiste, whose orchard near Fez is home to more than 250 varieties of citrus fruits. Stuffed pastries, <em>gambero rosso<\/em>, <em>tortellini with ricotta<\/em>, and lamb served with <em>caponata<\/em> set the tone for the menu. <\/p>\n<p style=\"font-weight: 400;\">Set in a space designed by Pierre-Yves Rochon, blending Moroccan craftsmanship with Art Deco influences, Aldabaran welcomes guests from breakfast through dinner.
