First reported by Bouillantes, then confirmed by <a href=\"https:\/\/lek2collections.com\/fr\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><strong>K2 Collections<\/strong><\/a>, the closure of Sarkara comes alongside the departure of its chef, S\u00e9bastien Vauxion, who also served as the group\u2019s executive pastry chef. Opened in 2017, this restaurant\u2014entirely dedicated to dessert\u2014earned its first Michelin star in 2019, followed by a second the following year, becoming a truly unique destination on the French gastronomic scene.  <\/p>\n<h2>Sweet Freedom<\/h2>\n<p style=\"font-weight: 400;\">I met S\u00e9bastien Vauxion in 2020, when I was writing for <em>Le Temps<\/em>. I still remember that tasting, which captivated me, but also the man behind the dishes. A chef of rare humility, possessed of extraordinary sensitivity, capable of creating desserts of striking depth and freedom. Sarkara\u2019s passing serves as yet another reminder that the specter looming over haute cuisine today spares no one\u2014not even the very best. But S\u00e9bastien Vauxion\u2019s talent is immense.
