I headed to Paris’s 16th arrondissement, a neighborhood I actually don’t venture into very often. Yet that’s where Camille Saint-M’leux opened Geoélia just one year ago. Barely thirty years old, her first restaurant, already a Michelin star… and, above all, a culinary identity of astonishing maturity.

Every dish, every sauce, every jus, every cooking method, every shellfish, and every fish seems to evoke memories of his childhood. Nothing is showy; nothing feels forced. Everything seems natural. Technique is ever-present, but it never overshadows the emotion. This is how the whelk awakens the chef’s childhood memories, like a snapshot of the past. Poached in a broth of bay leaf mayonnaise, roasted buckwheat, and a delicately emulsified court-bouillon.

Camus Artichoke, Vinaigrette with Aged Port ©Edouard Amoiel

Surprising Black Grains

Consommé, a staple of French cuisine, takes on a new dimension here with a version featuring grilled sardines—rich and delicately briny. Midway through the course, a bouquet of oyster leaves, cilantro, glasswort, dill, and anise flowers awakens the palate and lingers with a hint of the sea. The menu unfolds with remarkable coherence. A few additional creations blend in naturally, without ever disrupting the narrative flow. We let ourselves be gently carried along, almost without realizing it.

Even more surprising, Camille Saint-M’leux combines two types of caviar with contrasting profiles—one with a more briny, fermented character, the other rounder and with a nutty flavor—to recapture the aromatic richness of the wild caviars of yesteryear. Next come the langoustines, served shelled, poached for 2 minutes in a court-bouillon, then coated with a piping-hot sauce made from their claws: the result leaves me speechless. In a second course, the langoustines are transformed into a comforting Sunday-evening soup with hints of bisque, accompanied by a langoustine-infused whipped brioche that we greedily dip into the elixir.

The chanterelles, simply “sautéed” in a pan, are paired with a reduced chicken stock, accented with a surprising Caesar-style sauce made with fresh anchovies—which naturally adds salt and depth—while a few fresh almonds round out the dish. Finally, the meat dish, Camille Saint-M’leux-style, comes down to three ingredients: Jersey beef, cuttlefish, and herring roe. The beef, seared on the barbecue, interacts with the cuttlefish ink and herring roe in a smoky, salty interplay, enhanced by cuttlefish tagliatelle with beef fat and a ragout made from its tentacles.

{%CAPTION%}

In theaters…

The chef appears in the dining room.
