This tall, strapping fellow with blue eyes, a southern French accent that colors every sentence, a firm handshake, and a boisterous manner is one of those men who fill a room with their presence even before they step inside. He can come out with a well-chosen quip, get worked up over something that annoys him, and then burst out laughing the very next second. With him, everything is spontaneous. He has witnessed the years when beach concessions were renewed every season, the prominent local families, the regulars who returned every summer, and the first major changes in a bay that has become one of the most sought-after in the world. <\/p>\n<p style=\"font-weight: 400;\">So, naturally, when asked what has become of Pampelonne, he smiles before replying that the question is a trap. Like many, he could give in to nostalgia. But that\u2019s not in his nature. \u201cThings used to be better,\u201d he\u2019s always heard people say in conversations. The establishments have never offered such a high level of service. The dining scene has expanded considerably. Today, Saint-Tropez and Ramatuelle attract an international clientele that didn\u2019t come here twenty years ago. On this point, he is categorical: \u201cThere\u2019s no comparison.\u201d    <\/p>\n<p style=\"font-weight: 400;\">On the other hand, he regrets that this move upmarket has sometimes come at the expense of authenticity. For him, true luxury isn\u2019t measured by the price of a bottle or the prestige of an international DJ. It lies elsewhere\u2014in an owner who greets customers by their first names; in a handshake; in a kiss on the cheek; in a table secured at the last minute; in a server who still takes the time to connect with guests.       <\/p>\n<p style=\"font-weight: 400;\">\u201cPeople have had enough,\u201d he repeats several times during our interview. At Moorea, he champions precisely this opposite approach. No minimum spend. No pressure to order more. No deafening music at lunchtime. The restaurant remains a restaurant. The party happens later at the bar. He could raise prices, require a minimum spend per person, or turn his establishment into a massive entertainment venue. He won\u2019t do any of that. \u201cI\u2019m in it for the long haul,\u201d he says. That sentence undoubtedly sums up his entire vision.    <\/p>\n<p style=\"font-weight: 400;\">Because he isn\u2019t looking for a quick summer profit. He\u2019d rather build loyalty among families who\u2019ve been coming back for twenty or thirty years. Some people now show him photos in which he\u2019s seen holding their children in his arms\u2026 before taking the exact same photo with their grandchildren. It\u2019s not Saint-Tropez that worries him. It\u2019s the world. Social media, the constant quest for visibility, standardized experiences, the gradual disappearance of human relationships. While many seek to follow trends, he champions the opposite. \u201cI\u2019m going backward,\u201d he says with a smile. Not out of nostalgia. Out of loyalty. Loyalty to a certain idea of hospitality, generosity, and craftsmanship. \u201cAd usque fidelis,\u201d the official motto of Saint-Tropez, seems to have been written just for him: faithful to the very end.         <\/p>\n<p style=\"font-weight: 400;\">In a world where everything now seems to be measured in numbers, exclusivity, and minimum projected revenue, Christophe Coutal still believes that a sincere smile, a handshake, and a southern French accent are sometimes worth more than a multimillion-euro production.
