This decision is, above all, a personal one. After many years marked by the intensity of service and the demands of the profession, Lucas Desbiolles now feels the need to take a breather. \u201cIt\u2019s time for me to put down the knives for a while to think about future projects,\u201d he says. He already has several offers on the table, though he hasn\u2019t decided on a specific direction yet.    <\/p>\n<p style=\"font-weight: 400;\">However, the chef is leaving Table Brute with mixed emotions. He would like to thank everyone who contributed to this adventure, particularly his two kitchen colleagues, Rapha\u00ebl Da Costa and Lo\u00efc Noumedor, whose essential role in the day-to-day operations he highlights. He also extends his gratitude to Paul Keenan, who placed his trust in him from the very beginning.  <\/p>\n<p style=\"font-weight: 400;\">At Table Brute, business continues as usual. During the summer, the chef\u2019s responsibilities are shared among the kitchen staff. The restaurant has not yet announced the identity of his successor or any potential changes to the menu. For Lucas Desbiolles, this hiatus is above all a time for reflection.
