Opened in May, this new spot serves Italian sandwiches. Its founder, Martin B\u00e9dat, is a graduate of the \u00c9cole H\u00f4teli\u00e8re de Lausanne. \u201cI\u2019ve always worked in the restaurant business, because my nonno and nonna ran an Italian restaurant here in Geneva,\u201d he tells us. After gaining experience with the Luigia group as manager in Fribourg, the time had come for Martin to return to our beautiful city to develop his own concept. That\u2019s how Lupo was born. The sandwiches are prepared to order, right before the customer\u2019s eyes. \u201cI\u2019ve always loved sandwiches, and it was important to me that they be delicious,\u201d Martin admits.       <\/span><\/p>\n<\/div>\n<div>\n<p class=\"Corps\"><span lang=\"FR\">On the menu: hearty sandwiches to enjoy. Topped with house-made sauces\u2014tarragon butter, tartar sauce, pesto, or smoked paprika mayonnaise\u2014they\u2019re served with carefully selected cold cuts: mortadella, porchetta, or San Daniele prosciutto, his grandfather\u2019s favorite. But what really sets them apart is the bread: crispy on the outside and soft on the inside.
