A few weeks after the opening of Pretty Patty in Zurich, I spoke to Lucas Jeanneret, one of the two founders of the Smash Burger chain. Before getting to the heart of the matter, it’s easy to imagine him between two services, with the plancha heating up behind him, the patties coming one after the other and the intensity of service never letting up. This is our chance to steal a few minutes of his time to find out how he feels about this new Zurich adventure, which is already shaping up like a tidal wave. <\/p>\n

Lucas, you make it sound like these first few weeks have been intense… what are your days like today?<\/h3>\n

As intense as ever. We work twelve-hour days, sometimes non-stop behind the stove. We can send out over a thousand patties in a day. But I like the pace: this job isn’t for sitting behind a desk. I want to be out in the field, with the teams, in contact with the product and the customers, and that’s exactly what I’m doing here. <\/p>\n

Did Zurich’s residents give you a warm welcome?<\/h3>\n

We weren’t expecting such a warm welcome. From the very first day, the establishment was fully booked. People are tasting and coming back. Perhaps we underestimated the training and impact of our communication. Basically, we want to be in line with our brand: simple, fun, no headaches. To come here is to forget your worries and have a good time. <\/p>\n

How did you manage this intensity with your teams?<\/h3>\n

We’ve recruited and trained a dozen people for private events, but no one is ready to handle 500 customers at once. It’s a young team, sometimes in retraining. We’re there with them every day, and that makes all the difference. They see our involvement, and that creates a real shared energy, even during rushes. <\/p>\n

There’s also this very strong idea of “founders in the field”…<\/h3>\n

Yes, and we can feel that it motivates the teams. Building over the long term means being present, especially in fast-growing concepts. It’s essential to be there, to give it your all. <\/p>\n

Was Zurich an obvious choice?<\/h3>\n

Not a matter of course, but a desire present from the very beginnings of Pretty Patty in Geneva. The project lasted a year, with the search for a venue the longest phase. After that, things moved very quickly. What I appreciate here is the efficiency: answers come quickly and things move forward. It’s functional and administrative, but more fluid than in Geneva. <\/p>\n

Tell us about the location?<\/h3>\n

We found the right balance: forty-five seats on two floors, open kitchen. This was essential for us. Nothing to hide, real interaction: customers see, teams feel the energy. It pulls everyone up. <\/p>\n

Have you adapted the map?<\/h3>\n

No, it’s exactly the same card as in Geneva. Staying loyal is the key. <\/p>\n

The burger market is saturated. Yet you still manage to create a buzz. How do you explain this? <\/h3>\n

We offer more than a burger: an experience, a brand. Atmosphere, design and welcome are as important as quality. We like the competition, working alongside big names. This proximity drives us forward. <\/p>\n

Finally, a word about what’s next?<\/h3>\n

We have several projects in the pipeline. For example, we’re thinking of organizing an event around mini-burgers dipped in a half-and-half fondue to offer our customers an original experience. We’re also planning to open Side Chick in Eaux-Vives in a month’s time. Although we are a little behind schedule on this latest project, it has enabled us to remain focused on Zurich in recent weeks. Following the consolidation of Zurich and the opening of Side Chick, we will be evaluating new development opportunities, while maintaining our focus on quality and customer experience. <\/p>\n

After just a few weeks, it’s already clear that the concept is more than just a product. Pretty Patty is more than just selling burgers, it’s creating energy, rhythm and a way of life. In Zurich, the gamble is already turning into a winning venture.
