A position that has been maintained, but weakened, in a context that has become highly sensitive. After all, it may only be a matter of time &#8211; or of holding the line. In recent weeks, the climate has darkened, creating a deep malaise that is difficult to ignore for a company of this stature. It has to be said that the initial choice had already left no one indifferent. Turning the page on Alain Ducasse &#8211; and what she embodied &#8211; to install a radically different profile had taken people by surprise, sometimes well beyond gastronomic circles. The inevitable comparison weighed heavily. Behind it, there was undoubtedly another ambition: to open up the place, make it more visible and attract a new clientele. A strategy that may have been successful in some respects, but today leaves a more fragile impression in the kitchen.
