Her smile is welcoming, uncalculated, natural. And in that smile, there’s everything: sincerity, high standards, and her very own way of bringing a place to life without ever trying to show off. Wearing her blue overalls, she can sometimes be found behind the bar, in the dining room or in front of the kitchen pass with the same authenticity.

For seven years, Max has anchored himself in the neighborhood, almost silently, while everything around him has changed and accelerated. And yet, at Max’s, time seems to have chosen a different cadence. For behind the walls lies a simple but rare idea: building for the long term. At no point during our interview does Alexandra talk about success. She talks about team, loyalty and sometimes even family. Most of today’s customers were already there at the very beginning. And in this business, that says it all.

Max’s terrace ©Edouard Amoiel

Weekend closed

Then there are the decisions. The real ones. The ones you can’t learn from books. The most recent, but surely the most striking, is the weekend closure. Against the current. To preserve balance, life and its meaning. A decision taken in twenty-four hours, almost instinctive, but profoundly lucid. Here, people are not sacrificed on the altar of numbers. And paradoxically, perhaps that’s what makes it all hang together.

In the bright shadow of the dining room, there are the stoves. And behind them, since the beginning, chef Yohann Castanet. A rare loyalty here too. And a complicity you can feel in a matter of seconds, almost like an old couple (in their words). His cuisine? It doesn’t try to impress. It seeks to be understood. Gourmet dishes that provide comfort when it’s needed. Max is a brasserie that evolves, that breathes with the times. Here, the classics are not relegated to the background, they are transformed. A vol-au-vent becomes a playground, a stuffed cabbage tells a different story, a low-temperature picanha dialogues with precise, discreet but always pertinent seasonings.

Alexandra Vialettes behind the counter at Chez Max ©Edouard Amoiel

A second location, one day?

And above all, there’s that direct link with customers. It’s a real neighborhood brasserie. With its regulars, its rituals and its services that go by without you seeing the time go by,” explains the owner. A place where you come for no particular reason, and that’s probably the best reason of all.

Alexandra Vialettes is already looking further ahead, of course. The idea of a second establishment is floating around somewhere. Without haste. With her characteristic lucidity. Because here, nothing is done to the detriment of the balance found.
