Passionate about Asian cuisine, her project blends traditional know-how with local produce from short distribution channels. Each gyoza is prepared with a fragrant dough and available in several versions: black garlic, plain, turmeric or spinach. Everything is designed to bring out the full flavors of the ingredients. From melting beef and moist pork to crispy chicken and vegetarian tofu, Cl\u00e9mentine draws inspiration from her travels in Asia and her experience working alongside chef Kaiichi Arimoto to create unique recipes.
