In a place steeped in history, it’s easy to see that haute gastronomy isn’t just about cooking. It’s also the embodiment of what’s going on right next door: silent precision, a set-up worthy of a score, and that very special concentration you only find before the first “bonsoir”.

Pascal Brault in front of the F.P. Journein Geneva, Pascal Brault sets the tone with a simple glance. A restaurant manager, yes! A real one. But above all, a man of welcome, rhythm and relationships. A face that knows how to anticipate a table before customers take their seats. It’s a job you do standing up, with a fine memory: habits, first names, vision. And a form of exactitude exercised with delicacy.

His story begins far from the hushed salons, in the Annecy region. At the age of fourteen, a decision taken early and quickly, like a door slamming, sent him off to boarding school in Bonneville. Let’s move on to another era: dormitories lined up “like in Les Choristes”, battery-operated washbasins, miles of walking in the evenings, and a harshness that forges as much as it dents. Pascal speaks of it without embarrassment: “It did me good. It shaped me. There’s an exactness to the words that describe him: a refusal to be sentimental, but not to be truthful.

The dining room of the F.P. Not his way. Not the teachers. Not the atmosphere. So he turned to the dining room: “service as an art form”, he says. Not a secondary role, not a simple plate carrier, but an art of attention, tempo and presence. The dining room as a stage where you don’t have to show off, but where everything depends on you. For ten years, he built up a “starred” CV. Not out of snobbery, but out of ambition. Because he rejects the idea of ending up worn out, “with a hank on my arm”, pulling beers over and over again. He wants to learn from the best, to absorb, understand and climb.

And then off to Geneva on June 3, 1991 at the Beau-Rivage Hotel. He climbed up to the terrace of the Chat-Botté, where he got into the swing of things, without any instructions. He started out as head waiter, and already had the ability to “send it” when the room filled up in the blink of an eye. It’s brutal, but it’s instructive. And that’s when a figure emerges who runs through his story like a compass: Marc Lehmann, the maître d’hôtel, “super classy”, a great professional. In Pascal’s mouth, this kind of phrase is never a formula: it’s a tribute. He speaks of transmission as one speaks of elegance, without lyricism, but with respect.

The decoration of the F.P. Starts at five in the morning. Redundancy. Discipline. Management. And a key learning: the invisible mechanics of the hotel, its rules, its urgencies, its responsibility. It takes him a while to arrive “awake” at the crack of dawn. But he learns. And he began to understand that he liked organizing, structuring, leading a team and, above all, not just executing. One morning in 2000, Pascal became manager of Le Chat-Botté. The same gesture, the same room, but a different status. He recounts a detail that says it all: an old customer, long indifferent, finally calls him by name. It’s not ego. It’s a recognition of the profession. A generation that knew what the venue really meant.

At Le Chat-Botté, Dominique Gauthier, the chef in the kitchen, and Pascal in the dining room have forged a long-standing relationship. A relationship of trust built up over hundreds of courses, crises, laughter, routines and repeats. Fourteen years as a duo and over twenty years working in parallel at the Geneva palace. They learn to speak the same language: flavors, agreements, progress, organization, energy. “The story of a cuisine is not just told on the plate. It’s also about how you bring it to the table, how you set it down, how you accompany it,” he recalls. Pascal was that link: the voice of the kitchen in the dining room, without ever betraying or overplaying his hand.

Pascal Brault at F.P. There, the same customers relax. They shake hands and kiss. We’re out of the stilted environment. Pascal learns to relax – and that’s not a detail: it’s a skill. Then comes the shock: December 2021, redundancy, unemployment, the impossibility of finding a new position despite his network and experience. He puts it bluntly: “it hurts”. No depression, but a clear wound. A lifetime of housekeeping, and suddenly the sofa, doubt. He’s even considering moving to the other side of the world.

And that’s where the story tightens: Dominique Gauthier signs with F.P. Journe and calls Pascal without hesitation. There’s something simple and powerful in this story: Pascal hands his CV to François-Paul Journe, and the answer comes back: “If the boss says OK, I’m in. A contract of trust, raw and immediate. A second chance, yes, but above all continuity. Proof that the profession sometimes gives you back what you’ve given it. November 1, 2023: opening. And that thrill when the door opens, customers walk in, recognize him and smile. Pascal resumes his natural position: “It’s given me a new energy, a new spiritual impetus”.

The F.P.
