Under the guidance of Morad El Hajjaji and Jewel Rholam, the team at the rue Henri-Blanvalet restaurant have devised an exceptional menu, built as a veritable journey around the Charlemagne myth. Great names follow one another at the table &#8211; from Pierre Vincent Girardin to Charles Lachaux, from Kei Shiogai to Roulot, not forgetting Coche-Dury or Domaine de la Roman\u00e9e-Conti &#8211; in a game of precise pairings, designed to dialogue with each plate. And because the Inda-Bar cannot conceive of this type of evening without a fitting finale, the tasting is extended to a form of apotheosis. A final service crowns the whole, with Jean-Yves Bizot&#8217;s Charlemagne 2022, accompanied by a truffled Brillat-Savarin, like a gourmet and emotional climax.
