Almost seven years after his first cheese shop, five years after the next one, and two years after he imagined Le Tablard &#8211; a place where wine meets good food and sharing around the table &#8211; the story continues to unfold for Martin Burrus. Over the past few months, ideas have circulated, debates have multiplied, hours have piled up around the table, with the Le Tablard team and in particular Mattia Baldissara, its general manager.
