For the occasion, chef Yoann Calou\u00e9 has devised a gastronomic menu with black truffles at its heart, to match a selection of the estate&#8217;s emblematic cuv\u00e9es. The menu begins with an aperitif of foie gras, caviar, truffle <em>arancini<\/em> and crabmeat, accompanied by Pierre P\u00e9ters Blanc de Blancs grand cru champagne. Dinner continues with a pithiviers of foie gras, Nant d&#8217;Avril poultry and black truffle, served with two Chambolle-Musigny 2017 and 2018. Plin ravioli with truffle and ricotta will then dialogue with a 2012 Chambolle-Musigny<sup>1er<\/sup> cru Les Cras and a 2012 Bonnes-Mares Grand cru. The main course, Black Angus beef with truffled mousseline, is paired with a Morey-Saint-Denis<sup>1er<\/sup> cru Clos de la Bussi\u00e8re 2020, before a truffled Brie from Bruand paired with the 2022 vintage of the same wine. The evening concludes with a surprise by Christophe Roumier.
