With hindsight. With scars too. “The year 2025 was one of the most difficult of my life. He says it without seeking effect. Almost as an observation. Opening a restaurant of this size – twice the size of anything he’d done before – requires more than just energy, and implies an inner stability that Florian hadn’t fully achieved by the time he opened. He whispers it modestly. The rest is nobody’s business.

Le Dorian is too large to be run like a bistro. Too structured to be run on instinct alone. To Andrea Branca in the kitchen, to Guillaume Nonnet and Ugo Callegaro in the dining room. He trusts them – he always has – but everything is heavier. Because every decision now carries collective weight. Because every mistake costs more. Because succeeding is also tiring. And yet, paradoxically, perhaps that’s what success is all about.

Not being behind the stove from morning to night. No longer able to do it all: set-up, suppliers, customers, team, family. Accepting that the kitchen is no longer the sole center of gravity. With humility. Without posturing. Tables fill, empty, sometimes cancel – often on the same day. VAT falls. So do the charges. Customers often forget that a restaurant is first and foremost a fragile business model, dependent on the weather, the mood of customers and staff, and the establishments opening or closing nearby. Le Dorian, however, works. The figures are there. Rents are paid. The team is holding up. The house is standing stronger than ever.

Then there are the other restaurants. Le Bleu Nuitfor example. A place he doesn’t try to control at all costs. Because, in the end, everything depends on the teams. The changing habits of Genevans. People consuming and spending less. But despite everything, he says it straight: Le Dorian doesn’t make him any happier than his other restaurants, but it does make him proud. It took a long interview before he could say it.

So yes, Florian Le Bouhec is proud. But not every day. Not without nuance. Proud, too, of a reputation – that of someone who is said to “make everything he touches work”. Proud of a career built up from his first restaurant, l’Artichaut. Proud to have made it this far without cheating. “I don’t think I could have done any better,” he says, almost inadvertently. The phrase is beautiful. It deserves to be acknowledged. It doesn’t speak of perfection, but of the culmination of a cycle.

And maybe that’s the balance he’s finally found today. Less illusion. More lucidity. Less daily cooking, but more time. For himself. For others. For what’s next… whatever that may be. Nothing can be taken for granted, and everything can come to an end. Florian knows this better than anyone. But for now, Le Dorian is holding on.
