We’re delighted to once again feature a chef-in-residence at B\u00e1nh M\u00ed<\/strong><\/a>. For this new fortnight, which ends on October 19, Vanessa and Pierre introduce us to chef Ely Tran. Initially based in Marseille, she now sets up shop in the beautiful city of Calvin before officially opening her own restaurant. This self-taught chef has been cultivating a gastronomic philosophy based on bistronomy and Asian cuisine for ten years. <\/span>The daughter of Vietnamese and Laotian parents settled in northern France, she took part in several restaurant projects and opened D\u00eenette in Berlin, which quickly became the benchmark for free and original cuisine. It was during a return to her roots in Laos that she explored her roots and clearly revealed her culinary vision. On her return to France, she took up a series of residencies in the heart of the Phocaean city, while setting herself a new challenge: to open a South-East Asian restaurant that breaks with codes, a tribute to her origins and an invitation to raw, sincere and refined sharing. <\/p>\n
