In just a few weeks, chef Jonas Bolle has made a comeback on the Geneva food scene, creating the menu for the K\u0101 Kitchen<\/strong><\/a> within the Ka Studio yoga and pilates space. As we mentioned on Radio Lac a few weeks ago, the titles of his menu are very appealing and very much in tune with the times. After hesitating between green and healthy foods and more outlandish dishes, my choice finally fell on the breaded veal escalope. Whether Milanese or Viennese, this is a most exquisite dish when prepared according to the rules of the art. Thinly or thickly sliced, breaded with panko breadcrumbs or bread and parmesan, the possibilities are endless. Jonas Bolle’s interpretation is a nod to the melting pot of cultures. While respecting Austrian traditions, the chef covers the schnitzel with a Caesar salad. A gourmet interpretation with a provocative twist.
