This talent, spotted by Gilles Blandin, Meilleur Ouvrier de France, has a wealth of experience behind him. From the Jules Verne in Paris to the Chat Bott\u00e9 in Geneva, he has evolved in a world punctuated by service and the long working hours associated with the profession.  <\/p>&#13;\n<p>Originally from Haute-Savoie, he draws his inspiration from the cooking of his mother and grandmother. Both passed on to him a passion for country dishes that tell a story. His father, a museum owner, has always passed on to him a passion for history as a whole.
