As announced last week by the Gault&amp;Milllau website, the news is already delighting regular customers. The new owner, Antoine Getaz, didn&#8217;t expect the work to be on such a scale, but it had to be done to keep up with the times. &#8220;The most important thing for us is to preserve the soul of the place without ever altering the DNA of Brasserie Lipp. We want to change things without the customer noticing,&#8221; says the owner, contacted by telephone. A necessary rejuvenation for the Franco-Genevan institution.
