Most bakeries cheat by calling a sandwich pain bagnat, which has nothing to do with the Nice sandwich. Pan bagnat was originally a poor man&#8217;s dish, intended for peasants and fishermen. The word bagnat means &#8220;wet&#8221; because   <span class=\"apple-converted-space\"> <\/span>stale bread soaked in water and tomato juice served as the base for the preparation.<span class=\"apple-converted-space\"> <\/span><\/p>\n<p class=\"ydp7f82fcaayiv6228403475ydp3a76d3d1yiv3278806018ydpff267dffyiv9786202211ydp461f1651yiv7764761733ydp41823114yiv2164661954ydpd333bffcyiv2273007892msonormal\">Passionate about sandwiches and traditional recipes, Romain Bortolotti offers us the one and only Pan Bagnat from his little pocket counter. He is pleased to share his recipe with us: <span class=\"apple-converted-space\"> <\/span>for<span class=\"apple-converted-space\"> <\/span>get started,<span class=\"apple-converted-space\"> <\/span>cut<span class=\"apple-converted-space\"> <\/span>in half a delicious country loaf from <a href=\"https:\/\/www.instagram.com\/la_boulangerie_des_grottes\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><strong>Boulangerie des Grottes<\/strong><\/a>,<span class=\"apple-converted-space\"> <\/span>remove<span class=\"apple-converted-space\"> <\/span>then the crumb<span class=\"apple-converted-space\"> <\/span>top edge<span class=\"apple-converted-space\"> <\/span>to make room for the garnish, then<span class=\"apple-converted-space\"> <\/span>soak<span class=\"apple-converted-space\"> <\/span>olive oil, vinegar, salt and pepper.<span class=\"apple-converted-space\"> <\/span>Assemble the sandwich with seasoned tomatoes, tuna belly, hard-boiled eggs, black olives, spring onions, finely chopped radishes and basil.<span class=\"apple-converted-space\"> <\/span>The whole<span class=\"apple-converted-space\"> <\/span>without mayonnaise,<span class=\"apple-converted-space\"> <\/span>without chicken or curry<span class=\"apple-converted-space\"> <\/span>and especially without salad.<\/p>\n<p class=\"ydp7f82fcaayiv6228403475ydp3a76d3d1yiv3278806018ydpff267dffyiv9786202211ydp461f1651yiv7764761733ydp41823114yiv2164661954ydpd333bffcyiv2273007892msonormal\">To perpetuate<span class=\"apple-converted-space\"> <\/span>traditions, Pan bagnat has now been awarded a label<span class=\"apple-converted-space\"> <\/span>which allows<span class=\"apple-converted-space\"> <\/span>recognizing establishments<span class=\"apple-converted-space\"> <\/span>respectful of<span class=\"apple-converted-space\"> <\/span>the traditional recipe.
