The vintage gas lamps are already shining brightly. The wait staff are busy preparing for the evening service. The scorching heat makes the job even harder for these workers, who deserve our respect more than ever. Reserved months in advance, a table at La Colombe d’Or is earned and appreciated at every turn. The ultimate experience: we have a table for two, seated side by side, with a view of the restaurant. Here we are, taking our seats, contemplating and savoring, while we recall the days when Simone Signoret and Yves Montand had their regulars seated at the famous “table une”.

Shrimp bouquet à la Colombe d’Or ©Edouard Amoiel

Crudités and Picasso

We enjoy the moment. A glass of chardonnay later, we follow the rhythm of the guests as they cross the restaurant towards the bar, the hotel, the pool or a table, and let ourselves be lulled by the illusory feeling of being out of time. Minutes go by, we have to choose. We are seduced by the titles of the dishes on the menu; unlike in the modern restaurant world, La Colombe d’Or nurtures its gastronomic heritage with intelligence and passion. Between the appetizers and the famous Panier de Crudités de la Colombe d’Or, our choice is a bouquet of prawns and a melon jambon.

As you turn down a corridor or into a lounge, you’ll come across paintings by Braque, Matisse, Léger or Picasso… all former residents whose works of art line the walls, giving this famous boarding house an extra soul that transcends us and reminds us that beauty is universal. Fish takes center stage, with poached sea bass and mousseline sauce competing with red mullet with meunière sauce. But the prize goes to a marvelous turbot, unadorned and simply accompanied by a bewitching beurre blanc and steamed potato. The only downside to this cheerful picture is the beachwear and lack of elegance of some of the guests who cross the threshold of this temple of art! It would have been in better taste to show some respect for the place and for the staff, who endure the same heat and practice their profession in suits and ties.
