A gastronomic communion that brings us closer to the men and women who work behind the stove every day. Often, an exchange is created between two worlds that are separated by the protocol of restaurant service. At the counter, distance disappears in favor of human closeness, where the beginning of an exchange can eventually turn into a long conversation. Let the conversation begin!

Mandarin culture

Opening in place of the Indian restaurant Le Rasoi, the Sachi restaurant in the heart of the Mandarin Oriental hotel offers elegant, contemporary Japanese cuisine. Watching these modern-day artists practice their art is a culinary melting pot. It’s hard not to appreciate their dexterity and mastery of their subject. Each movement is a symphony of calculated gestures, where rigor rhymes with precision, slicing with meticulousness, and the product is showcased like precious raw materials.

Chef “Mitsu”, aka Mitsuru Tskukada, is at the helm of this Japanese vessel, which brings together several worlds in one place. The hushed dining room, the sheltered terrace, the contemporary bar and… the counter, where you hand over to the chefs and utter the phrase “omakase”. They choose the sequence of dishes according to their inspiration and seasonal arrivals. Interspersed with hot and cold dishes, a string of small starters opens the ball, before giving way to an assortment of sashimi. Without waiting, the marvelous tempura (a light, crispy Japanese fry) makes the pleasure cursor twirl, and it’s the kobe beef sautéed in an intense, spicy sauce that stirs the senses. While the sushi is enjoyed one after the other as it is created, the chef manages to compose his “starting eleven” from an impressive menu.

Know-how

It’s hard not to stand in awe of the masters of the art, so impressive is their knife skills. Let’s take a moment to contemplate this unique gastronomic art. Even if Mandarin Oriental is riding the Japanese wave that seems to be (even) taking Geneva by storm, Sachi is a success story in its own right. After the infatuation of the early days, the passage of time will confirm the future of this elegant Japanese vessel.

The Mandarin Oriental hotel’s Japanese-inspired restaurant has already won over a clientele eager for a Japanese culinary sensation.
