It&#8217;s at chef Paul-Etienne Cousin&#8217;s <a href=\"https:\/\/www.maporestaurant.ch\/\" target=\"_blank\" rel=\"noreferrer noopener\">MAPO<\/a> restaurant that he sets his sights and makes our mouths water with this appetizer based on tomato combined with peach and stracciatella.
