A paradox of sound in the bustling Pâquis district. With a respectful nod, we greet Masahiko Numabukuro, the owner of the restaurant, who is already in full concentration, and who furtively diverts his attention to greet us politely in return. Like disciplined schoolchildren, we take our places at the counter, admiring the dexterity of this reserved chef who perpetuates Japanese culinary tradition with excellence. It’s a solemn moment when we taste the first tears of Dassai 23 Junmai Daiginjo sake. The gastronomic ballet can begin.

Chef Masahiko Numbukuro © EAmoiel

Out of time

Behind the tiny counter, Masahiko Numbukuro slices a fatty tuna into sashimi, assembles a scallop nigiri, grills a teriyaki chicken skewer, lacquers an eel with miso sauce and so on. All in total silence and calm. Without ever showing a sign of weakness, this knife-wielding warrior delights his guests in this quasi-spiritual setting. At a time when the world seems to be spinning out of control, coming to Nagomi’s home is an opportunity for meditation. Far from the hustle and bustle outside, this restaurant protects, comforts and soothes… at least for the duration of a meal.

Resembling in every way a typical Japanese counter, the space is far from the plush, slightly pompous style adopted by some other Japanese restaurants. Here, there’s no ostentatious decoration and no background music set to disappointing covers of classic songs (whose original versions are so catchy). A return to simplicity where gastronomy takes precedence over decoration. On the kitchen side, you’ll be seduced by sushi executed according to the rules of the art, where the freshness of the fish plays symbiosis with the cooking of the rice. Respect for tradition and savoir-faire are always present.

Valiant service

With Alexander Bassanini at the helm, Nagomi is more than ever the landmark for gourmets. Single-handedly in charge of the entire dining room, he is always the smiling, efficient figure who takes customers to the far-flung gastronomic lands of the land of the rising sun.

This discreet temple to Japanese gastronomy continues to set the standard for gourmet delights from the land of the rising sun.

This discreet temple to Japanese gastronomy continues to set the standard for gourmet delights from the land of the rising sun.
_slim_seo_primary_term_restaurants-par-lieux":0,"_slim_seo_primary_term_style-de-restaurant":0

356
["post-21745","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-chronicle
["GET
