Between his open-plan table d&#8217;h\u00f4tes, his cosy dining room and his private salon on the second floor, the chef is on all fronts! Offering a technically accomplished and devilishly gourmet cuisine, this week he invites us to taste a lobster puce accompanied by his lobster, pomelo and avocado remoulade.
