Against all expectations, chef Thierry Marx is leaving the Parisian palace on the Faubourg Saint-Honor\u00e9 to concentrate on his own restaurant <strong><a href=\"https:\/\/www.onor-thierrymarx.com\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\" data-cke-saved-href=\"https:\/\/www.onor-thierrymarx.com\">Onor<\/a><\/strong>. A former judge on the TV show Top Chef, this molecular cuisine enthusiast is turning the page after 14 years behind the stoves of the Michelin-starred restaurant Sur Mesure, as well as the brasserie Le Cam\u00e9lia, bars and room service. He explains in a press release that this choice represents &#8220;the culmination of 25 years&#8217; work on a different economy, with a social and environmental impact.
