The phrase “Those who know, know” is sometimes debatable. For what do they really know? Does it imply that the others are not part of the same congregation? In the case of La Coupole<\/a><\/strong> “They know” and the restaurant, a veritable Geneva institution, defies the surrounding gastronomic laws. With its two dining rooms and two different atmospheres, this brasserie on the Rond-Point de Rive offers top-quality cuisine and gourmet lunch formulas. It takes a certain amount of courage to take on (culinarily speaking) a local gastronomic icon. Many restaurants attempt to restore a typical national dish, such as perch fillets, to its former glory. Some chefs are paying the price. Slightly crispy and divinely moist, La Coupole’s perch fillets are a return to our roots, bringing back childhood memories. Accompanied by crispy fries and a dollop of spinach to ease the conscience, happiness can be found at La Coupole (and “we’ll know they know”). <\/p>\n
