The son of a restaurateur, Hugo began to immerse himself in the profession at an early age. Logically, he was drawn to the world of gastronomy and left for London, where he started out as a member of the front-of-house brigade at the famous Hakkasan and Zuma restaurants. After five years of hard work, he returned to the shores of Lake Geneva and joined the team at Arabesque, the Lebanese restaurant at the H\u00f4tel Pr\u00e9sident Wilson. Hugo Menu soon became Ma\u00eetre d&#8217;h\u00f4tel at the Geneva luxury hotel.
