Alongside Jacopo Romagnoli behind the stoves, Thibaud Cogne is the new room manager who has replaced Lavinia Benazzo. After working at Cap&#8217;s Barbecue restaurant, this former graduate of the \u00c9cole H\u00f4teli\u00e8re de Gen\u00e8ve is busy in his new role as manager. With the arrival of the sun and the opening of the terrace, he juggles lunch and dinner services with panache.
