From risotto, calamari and lobster bisque to wild turbot, shellfish and burnt leek, the chef continues to concoct a cuisine that delights the palate of gourmets passing through Rue de Hesse. Between courses, the talented chef likes to take his mind off the stress of his job by listening to music.
