Following the announcement of the departure of emblematic chef Dominique Gauthier for new culinary adventures at the end of the summer, the palace&#8217;s management is counting on the talents of young Mathieu Croze to ensure a smooth transition. Chef Gauthier&#8217;s right-hand man for 4 years, he began his career with Anne-Sophie Pic in Valence and then Lausanne, before working with Cyrille Lignac.
