Who was he? The Parisian chef who wore the same outfit in his restaurant Luca Carton and pioneered the art of wine and food pairing. Anyway, back to Geneva. What a pleasure to see the Socrate&#8217;s owner twirling around the room among his guests. This discreet, formidably efficient man respects all the codes of bistro hospitality. He uncorks the bottles, takes the orders, serves the scurrilous dishes&#8230; all with an undisguised smile and an undiminished passion for his craft. Am I in the right place? It doesn&#8217;t matter, though, as we lounge on the crowded terrace which, despite the regular noise of the new Geneva public transport routes passing nearby, retains its summery charm. With its black and white tiled floor, red velvet banquettes and vintage phonograph, the restaurant&#8217;s interior is as welcoming as ever, reviving the bistro spirit. What a wine cellar&#8230; but what prices! Prices are skyrocketing for fine wines. This has a logical impact on the consumer, which unfortunately corresponds in every way to the price explosion currently affecting the wine world.     <\/p>\n<p class=\"\" style=\"white-space: pre-wrap;\">As my heart sways between the Pistach\u00e9 P\u00e2t\u00e9 en Cro\u00fbte and the Traditional Morel Terrine, a choice has to be made. In the end, it&#8217;ll be both, to kick off what promises to be an auspicious evening. There&#8217;s still time to read Socrates&#8217; four commandments before placing your order: &#8220;Good wine makes good food, drinking a barrel of wine means saving a winegrower, I like the wine from here but not the water from there, and don&#8217;t listen to your doctor, do as he did, drink good wine&#8221;. The puff pastry crumbles at the first touch of a knife anxious to get to grips with this croustade canaille. The creamy sauce hits the right note. As for the main course, the beef cheek and its (real) pur\u00e9e are worthy of the title of house classic. So tender, so opulent&#8230; so bistro! We&#8217;re delighted to note that avocado and kale have yet to cross the threshold of rue Micheli-du-Crest. On the sweetbread side, a sauce that&#8217;s far too sweet bogs the dish down in a heavy, overly syrupy water table. What a shame!       <\/p>\n<p class=\"\" style=\"white-space: pre-wrap;\">  The last diners leave the premises with smiles on their faces, and we too understand the enthusiasm that overwhelms us. These days, the Socrate is a reassuring dining experience and an integral part of Geneva&#8217;s leading bistro scene.
