With this Breton sea urchin, fermented white strawberries, almond espuma and beet powder, he suggests tasting a wine produced in the Roussillon region, in the commune of Calce, by Virginie Maignien.   <br\/>Domaine La Spanda &#8220;Ayur&#8221; Vin de France Blanc 2021, is a cuv\u00e9e made from naturally vinified Muscat \u00e0 petits grains grapes. This is a wine of great finesse and elegance, combining the floral and exotic aspects of Muscat.
