During my last visit to the Nj\u00f8rden<\/a> restaurant in the heart of Aubonne village, I had the honor of being served by Tony Lecuroux. The benevolent manager of this Nordic-inspired Michelin-starred restaurant, this young talent is as experienced as he is masterful at service. Lulled by the Syrah wine since his early childhood, he quickly decided to take up sommellerie. He began with an internship at the three-starred Le Louix XV restaurant in Monaco, before moving to England to perfect his wine-making skills. The health crisis prompts him to get closer to the vines. In just a few months, he visited over 250 winegrowers and even took part in the harvest at Ch\u00e2teau Latour in Pauillac, Gironde. Alongside his partner, he even stayed in Bordeaux for over a year. In 2021, he moved to the heights of the commune of Vaud. The instigator of the wine list, which he designed himself, integrating over 450 wine references in the space of two years, he has not forgotten the Swiss vineyard. As chef Philippe Deslarzes’ right-hand man in the dining room, with a passion for Riesling, he is a talent to watch! <\/p>\n\n
