Inspired by the spirit of London restaurant ROVI, this eagerly-awaited opening will focus on a culinary approach marked by vibrant flavors where grilling and fermentation will take center stage. Chef Maxime Martin will take the helm from the outset. With seven years&#8217; experience at Mandarin Oriental, he joined the Geneva hotel in 2018 after working for several years in Michelin-starred kitchens on the shores of the C\u00f4te d&#8217;Azur. Prior to this, Maxime trained in the kitchens of the Vegetable Master in London under Neil Campbell, executive chef of the Ottolenghi restaurant group and former head chef at ROVI. Maxime co-created the menu in Geneva, bringing Ottolenghi&#8217;s sun-drenched Mediterranean flavors to the table while integrating distinct Swiss touches.
