After collaborations at the Hotel Martinez in Cannes and The Brando restaurant in Polynesia, the chef from the Plaza-Ath\u00e9n\u00e9e is embarking on a major project at the summit of Mont Saint-Michel. For the moment, little information has filtered through, but the arrival of the former Top Chef winner will raise the low gastronomic bar at Mont Saint-Michel. Although the name has not yet been revealed, the restaurant will be housed in the Logis Sainte-Catherine, the former fire station. The building has been undergoing complete renovation since 2023 by the group <a href=\"https:\/\/www.mauviel.com\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><strong>Mauviel 1830 group<\/strong><\/a>. &#8221; <em>We <\/em>set ourselves some pretty clear specifications. We wanted to give pride of place to local produce, and also to offer the widest possible range of opening hours, so as to smooth out the busy hours. No, it&#8217;s not going to be a Michelin-starred restaurant.
