New season, new residency. The founders of B\u00e1nh M\u00ec<\/strong><\/a>s founders, Vanessa and Pierre, are back to delight us. After training in philosophy, political science and art, Anh Dao Nguyen turned to cooking at the Ferrandi school in Paris. She started out at the C.A.M restaurant alongside Korean chef Esu Lee, before exploring new culinary approaches in Lisbon, notably as co-chef of Tricky’s, voted best restaurant in the city by Time Out. Her talent then took her to Livingston in Marseille, where she formed an acclaimed duo with chef Valentin Raffali. But it was in Denmark, at the two-Michelin-starred Kadeau restaurant, that she had a decisive experience, refining her culinary vision by immersing herself in a rigorous approach to produce, between daily picking, fermentation and preservation. From March 27 to April 5, she will be in residence at Le B\u00e1nh M\u00ec restaurant in Geneva for eight exclusive evenings.
