His dream: to hang up the three stars previously obtained by Alexandre Dumaine on the pediment of this institution. Inhabited by an avant-garde culinary vision and his legendary drive, <a href=\"https:\/\/www.bernard-loiseau.com\/fr\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><strong>Bernard Loiseau<\/strong><\/a> transformed this historic site into one of France&#8217;s finest Relais &amp; Ch\u00e2teaux, where the whole world flocked to taste his genius dishes, such as Jambonnettes de grenouilles \u00e0 la pur\u00e9e d&#8217;ail et au jus de persil. Since the couple&#8217;s eldest daughter, B\u00e9reng\u00e8re Loiseau, took charge of the group in 2023, history and renewal have accelerated. With new openings and renovation in full swing, it&#8217;s on the plate that change is most likely to occur. Louis-Philippe Vigilant and his wife Lucile, the pastry chef, are propelling the fundamentals of Loiseau cuisine towards a new-found modernity. A few prestigious dates are to be noted in our gourmet diaries: March 16 with Maison Gu\u00e9rard, June 2 with chefs Franck Pellux and Fabien Ferr\u00e9, October 26 with David Toutain and December 7 with chef Marcel Ravin.
