Four times a month, she offers a surprise tasting menu made exclusively from local produce. Conscientiously, she sources her ingredients directly from small, responsible local farms, focusing on their by-products and unsold produce. Her aim is to show diners what a totally transparent food chain can look like, to introduce them to products that are often overlooked, but rich in our terroir, and to introduce them to ethically-minded local producers and their production methods.   <\/p>\n<p style=\"font-weight: 400;\">As an extension of this approach, she is writing a cookbook (the first in a series of four &#8211; one for each season). This first volume brings together all the recipes served at La Betsch in spring 2024. To finance part of the printing costs, Margaux is launching a crowdfunding campaign on <strong><a href=\"https:\/\/www.sig-impact.ch\/projets\/labetsch\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">SIG-Impact<\/a><\/strong>in the form of pre-orders for the book. Thanks to a great response, she reached 100% of her target in just one week!
