Like the restaurant business, the hotel industry is also undergoing its winter mercato. Against all expectations, Jean-Yves Blatt is leaving the Vaud resort of Villars for the Alpine peaks of Crans-Montana to take over management of the 5-star hotel Six Senses<\/a><\/strong>.
