Entitled La Estancia, Fabian Affentranger and his team celebrate Asado, an ancestral South American cooking technique. Based on the grilling of whole pieces of meat and fish over a wood fire, the Asado is not just about cooking, it&#8217;s also a ritual that often goes on late into the night, combining wine, food and good company. On the winemaking side, Laura Catena is an Argentinian doctor and winemaker, with degrees from Harvard and Stanford. She runs the prestigious <a href=\"https:\/\/catenazapata.com\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><strong>Bodega Catena Zapata<\/strong><\/a>founded by her father Nicol\u00e1s Catena Zapata. She has made a major contribution to the international development of Argentine wine, particularly Malbec.
