Alongside a hard-working brigade, supervised by his sous-chef Antoine Debonnaire, the chef and owner of the <a href=\"https:\/\/www.cafedesbanques.com\/fr\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><strong>Caf\u00e9 des Banques<\/strong><\/a> pursues his gastronomic path with an ever-renewed passion and an undiminished creative drive. Always in a spirit of gastronomic commitment, he offers us the chance to discover new dishes, with a focus on seasonal produce and the flavor combinations that are dear to the chef&#8217;s heart. Let&#8217;s be tempted by a tuna ventresca with cherry, green pepper and samphire, followed by <i>del plin<\/i> ravioli with chanterelles and peas. We don&#8217;t stop there with squid, Sardinian fregola with tomato, zucchini and chorizo, before tasting Minder farm beef, eggplant, artichoke and potato mousseline. Sweet touches include lemon, shortbread and basil sorbet, followed by strawberry gariguette, meringue and yoghurt ice cream.
