Alongside Benjamin Lanta in the dining room, this new tandem promises to create a real spark. Having worked in such emblematic Geneva establishments as the Hotel Le Richemond and the Bologna, this young talent has just spent over a year and a half in Japan. He has returned with an in-depth knowledge of products, cooking techniques (particularly Binchotan) and juices, which he intends to incorporate into his new menu at <a href=\"https:\/\/safre.ch\" target=\"_blank\" rel=\"noopener noreferrer nofollow\"><strong>Safre<\/strong><\/a>. &#8220;My time in Japan enabled me to understand a culinary culture that is unique in the world, to discover exceptional vegetables and fish, and to learn cooking techniques that I didn&#8217;t know,&#8221; reveals the chef, contacted by telephone. Following this experience, diners can now discover the menu of dishes he has created, without changing the fundamentals of the culinary vision of an elegant bistro: sweetbread vol-au-vent, charcoal-braised sar with black radish, ponzu dashi and yuzu vinaigrette.
