I was blown away after my visit to the restaurant Le Coquillage<\/strong><\/a> restaurant in April 2023. My dinner was much more than a simple tasting and sequence of culinary creations, it was a gastronomic pilgrimage where sea, earth and man came together. I’m not surprised to see all these distinctions raining down on a place and a family of rare discretion and humility. Twenty years after his father Olivier, Hugo Roellinger has been crowned Chef of the Year 2025. Trained by such greats as Michel Bras, Michel Troisgros, Pierre Gagnaire and Michel Gu\u00e9rard, <\/span>Hugo Roellinger offers a marine and plant-based cuisine in which spices play a central role.
