He is part of a family that has been shaping Italian gastronomy in Geneva for decades, and continues to defy current culinary trends. This is the story of a generational epic. Since his debut 25 years ago, my guest of the day has been working behind the stoves at Chez <a rel=\"noreferrer noopener\" href=\"http:\/\/www.restaurantroberto.ch\/\" target=\"_blank\">Roberto<\/a>, the restaurant opened by his grandfather in 1946.
