Here, the house stays open every day, with non-stop cooking until 9:30 p.m. and the impression that the lake, however cold, remains in fullness. Since mid-September, the restaurant has been living to the rhythm of the &#8220;r&#8221; months: every day of the week, arrivals from the sea dictate the menu. Breton lobster from traps, langoustines, oysters or sole from small boats arrive every other day, in a freshness that almost makes you forget that Genthod is not a port. At the same time, the hunting season takes hold, until the end of December, with a hare \u00e0 la royale like you&#8217;ve rarely seen, a deer medallion with a delicate touch, and those warm autumn rituals &#8211; homemade terrines, chestnut velout\u00e9, sometimes escorted by a discreet foie gras, sometimes not. A cuisine that warms without holding back. And since winter should never be an excuse to go inside, the house is preparing to leave its terrace open all year round: temperate, sheltered, comfortable, almost unreal, facing the lake.
